If you have a Madeleine pan these cookies are so easy to make and delicious. They're best eaten the same day as they're made as they can dry out pretty quickly. I got this recipe from the book 1001 Cupcakes, Cookies & Other Tempting Treats by Susanna Tee

Ingredients
140g butter
3 eggs
1 egg yolk
1 tsp vanilla
140g caster sugar
140g plain flour
1 tsp baking powder


I bought my pan online. They sell them at John Lewis as well

1. Preheat oven to 190 C. Lightly grease each pod making sure to get each crevice. Place the butter in a saucepan and heat until melted, then leave to cool.


I was lazy and melted the butter in the microwave

2. Place the eggs, egg yolk, vanilla extract and sugar in a large bowl and whisk until very pale and thick. Sift in the flour and baking powder and fold in, then fold in the melted butter. Spoon the mixture into the pan.


I only have 1 pan so I had bake these, clean it and grease it again

3. Bake in the preheated oven for 8-10 minutes, or until risen and golden brown. remove the cakes carefully from the tins and leave to cool on a wire rack.
