We’re having guests over tomorrow and my brother in law will eat anything so I know whatever I make it won’t go to waste. I have leftover cones from an Iron Cupcake so I decided it would be good to use some of them up. For Iron Cupcake my sister went to every grocery store in London to look for flat bottomed cones. She finally found them at Sainsbury’s.



I decided to make yellow cake (with strawberry flavor) and dark chocolate icing. This made 12 cones.

Basic Yellow Cake

Ingredients
120g unsalted butter at room temperature
1 1/3 cups cake flour
1 cup sugar
1 tsp vanilla extract
2 eggs
1 tsp baking powder
Pinch of salt
½ cup milk
1 tsp strawberry flavoring (optional)
¼ tsp pink gel coloring or 1 tsp liquid color (optional)
Handful of bright sprinkles (optional)

1. Heat over to 165 C and set 12 cones on a baking sheet

2. In a bowl cream together the butter and sugar, until light and fluffy about 3 minutes. Add the vanilla, and then the eggs one at a time beating each until fully incorporated before adding the next.

3. Sift together the flour, baking powder and salt. Add the flour mixture and milk to the egg mixture in three additions, beginning with the milk and ending with the flour, and alternating with the milk.

4. Stir in the strawberry flavoring , coloring and sprinkles with a spatula and scrape down the sides of the bowl.


5. Carefully scoop the batter into the cones until ¾ full. Place in the oven and cook for 20-25 minutes. The cones won’t burn. Cool before frosting.



Dark Chocolate Frosting

This is incredibley fudgey

Ingredients
¼ cup unsweetened dutch processed coca powder
¼ cup boiling water
1 ¼ cup unsalted butter at room temperature
4 cups + ¼ cup confectioners’ sugar sifted
¼ tsp salt
340g semisweet chocolate

1. Combine the coca powder and boiling water and stir until dissolved. With an electric mixer beat the butter, sugar and salt until pale and fluffy add the melted chocolate, ¼ cup sugar and coca powder mixture.

2. The mixture will be liquid like a ganache. Add the rest of the confectioners sugar one cup at a time beating after each addition

Pipe the frosting in a swirl and the cone will look like a soft serve ice cream! If you want sprinkles make sure to add them straight after frosting to ensure they stick (or have someone help and one person frost and the other sprinkles). I waited too long as you can see! I opted for some glitter dust instead.
