This bread is great for a mid week pick me up. It's fast to make and is really moist. This is the perfect cake to have with your morning coffee! I love any reason to have cake for breakfast.
My sister got the recipe from the Starbucks web page a few years ago. I'm glad we printed it off. It's no longer on the site (no recipes at all on the site anymore). I've since lost it but I'd written some sort of version of it in my recipe book.
Chocolate Cinnamon Bread
adapted from Starbucks (makes 1 loaf)
Ingredients
Cake
3/4 cup butter
1 1/2 cup sugar
3 eggs
1 cup plain flour
1/2 + 1/8 cup cocoa powder
1 tbs cinnamon
1/4 tsp baking powder
1/2 cup buttermilk (I used soy milk + 1 tsp apple cider vinegar)
1/8 cup water
Sugar Crust
1/8 cup sugar
1 tsp cinnamon
1/2 tsp cocoa
pinch of ginger
pinch of ground cloves
1. Preheat oven to 350 F/180 C. grease loaf pan generously (line with parchment paper if desired.
2. Cream together butter and sugar until light and fluffy. Add eggs one at a time scraping down side of the bowl as needed until incorporated.
3. Sift together flour, cinnamon, cocoa, salt and baking powder. In another bowl, whisk together the buttermilk, water and vanilla.
4. With the mixer on low speed add the flour mixture and buttermilk mixture slowly to the butter, beginning and ending with the flour mixture and beating until well blended.
5. Pour into the loaf pan.
6. To make the sugar crust combine all ingredients in a small bowl and then sprinkle on top of the loaf batter.
7. I've written down 45-50 minutes but mine took 60 minutes. I used a silicone pan so it was bulging a bit in the middle. It all cooked nicely in 60 minutes and the sides had a great crunch similar to the corner pieces that brownies get.
