Royal Wedding Victoria Sponge Whoopie Pies

I had just enough time to squeeze in one more Royal Wedding treat! I decided to go with a simple Victoria Sponge but styled into a bite size whoopie pie. These are really quick and easy to bring to your local street party! I still haven't decided how to spend my day off from work. Any suggestions?

Royal Wedding Victoria Sponge Whoopie Pies

Victoria Sponge is the most classic British cake, after a fruit cake. It's two vanilla cakes with whipped cream and raspberry jam sandwiched in the middle. It's not overly sweet but a good contrast to the sweet Bubbly Peach Cupcakes I made earlier.

I used cookie cutters to make stencils out of the aluminium foil for the icing sugar dusted on top. A little glitter mixed in there would look nice too. You could also make a reverse template to what I've done.

I used Hannah Miles book Whoopie Pies: Fun Recipes for Filled Cookie Cakes, which is absolutely adorable (I bought my sister the book and in the US it is in cup measurements not grams)! I thought about dying the cake red and blue but figured that wouldn't be sophisticated enough for such an occasion.

adapted from Hannah Miles 'Whoopie Pies' (makes 12)

Ingredients
Cake
125g unsalted butter, at room temperature
220g caster/superfine sugar
1 egg
1 tsp vanilla
320g self rising flour
1 tsp baking powder
1/2 tsp salt
250ml buttermilk
100ml hot water (not boiling)

Filling
300ml whipping cream
raspberry jam
icing sugar, for dusting

1. Preheat the oven to 350 F/180 C. Line a baking sheet with parchment paper or grease a whoopie pie tin. Sift together the flour, salt and baking powder together in a medium bowl and set aside.

2. In a large bowl cream together the sugar and butter with an electric mixer on medium speed, until light and fluffy about 3 minutes.

3. Add the egg and vanilla and beat until combined. Whisk in the buttermilk, alternating with the flour mixture. Whisk until Incorporated. Stir in the hot water.

4. Scoop one spoonful of batter into the tin or onto the tray. Alternatively for a uniform smooth pie put the batter in a piping bag. Let stand for 10 minutes and bake for 10-12 minutes. Remove from tin after a few minutes and set aside to cool completely.

5. Make the filling by whipping the cream until stiff peaks form. Place in a piping bag and swirl onto a round.

6. Place another cake on top a dust with icing sugar.

7. Enjoy!

Exactly one year ago today I went to Harrods to try one of their new whoopie pies. It was one of my first blog posts and it's also the number one post with the most visitors! I thought it would be fun to go back and try another one to see if they had changed at all.

I got to the bakery case and saw that they now also had cake pops! Even better! I went for one cake pop and one whoopie pie.

I chose a Strawberry & Pistachio cake pop. At £2.25 I think it's the most expensive cake pop I've ever had! It's pretty darn cute though. The little hearts are drawn on, not sprinkles. The outside coating is white chocolate. I was also excited to see such an exciting flavor combination.

I was trying to take a picture of it and it wasn't staying on the stick very well because it's actually two cake halves made from a mold. The cake was pistachio and the center was filled with strawberry frosting! The cake was good and moist but didn't have much flavor. I couldn't taste any pistachio at all. The center was light and had a lovely strawberry flavor.

I might be tempted to try another one since I really liked the "surprise" in the middle, but due to the filling there wasn't actually much cake on the stick.

Last time I had a Mango & Lime whoopie pie. This time they only had three kinds to chose from and only in one size.

I chose a Red Velvet whoopie pie with peanut butter filling, £2.50. I think it's a fun idea of putting a classic American filling inside a classic American cake. It also had a pink glaze on the top but same as last time the boxes they pack them in are too small and the glaze all came off on the lid.

The filling is a really perfect light peanut butter swiss meringue buttercream/marshmallow type frosting. The cake part is not very good. It's the wrong consistency and tastes as flat and dense as it looks. It has potential but as the whoopie pies haven't changed since they launched I doubt they will improve.

I think next time I'll stick with a cake pop!

P.S Thanks to the person at Google with a sweet tooth for choosing me as the Blog of Note for April 6th!

Oreo Cake Pops

I've been on a cake pop kick lately. My sister sent me some Oreo cake icing and I knew I couldn't make cupcakes after my recent tirade. Cake pops are a great way to use up the bits and pieces of cake paraphernalia I've accumulated.

Oreo Cake Pops

I used a yellow cake mix, mixed with the Oreo icing, dipped in white and milk chocolate (that Dr. Oetker sent me) and sprinkled with finely crushed Oreo cookies.

Oreo Cake Pops

I made the cake balls froze them overnight and then dipped them when I got home from work. These are tasty and quick for weeknight baking.

by me!

Ingredients
1 box cake mix
1-2 packages Oreo icing (if you don't live in the US or have little sisters that send you stuff you can make your own Oreo icing by folding some crushed cookies into vanilla icing)
milk and/or white chocolate for dipping
1 roll Oreo cookies
Lolly sticks

Oreo Cake Pops
This made one 8 inch cake round (a typical cake mix makes 2). I got this at the $1 store!

1. Make the cookie crumbs by throwing in a good handful of Oreo's in a food processor and grind until fine.

2. Make the cake according to the package (or make one from scratch). Set aside (or in the fridge) to cool.

3. Once the cake is cool crumble it finely with a fork. Squeeze half of the frosting into the cake and stir until it starts to combine. Add more frosting as needed (I used the whole tube). If you used a regular cake mix you might need 2 pouches.

4. Using an ice cream scoop make a round shape using 2 scoops of cake for each one. Line on a baking sheet and freeze for 20 minutes. After the 20 minutes stick the lolly stick in each and freeze over night (use a dab of melted chocolate on the end when you stick them in).

5. Once the pops are firm, melt the chocolate in a microwave safe bowl on 30 second intervals. Dip each pop in and shake off the excess. Sprinkle with the cookie crumbs straight away as it will set quickly! Store in an airtight container.

Meringue Filled Coffee Cake

The March 2011 Daring Baker’s Challenge was hosted by Ria of Ria’s Collection and Jamie of Life’s a Feast. Ria and Jamie challenged The Daring Bakers to bake a yeasted Meringue Coffee Cake.

Meringue Filled Coffee Cake

This has been my favorite challenge so far. Yeast is usually my nemesis but I did really well this time and it came out like bread should!

Meringue Filled Coffee Cake

I filled mine with chocolate chips, cinnamon chips and walnuts.

Meringue Filled Coffee Cake

Meringue Filled Cake

Ingredients
4 cups flour
1/4 cup sugar
3/4 tsp salt
1 package active dried yeast
1/4 cup water
3/4 cup milk
1/2 cup unsalted butter, at room temperature
2 eggs

Meringue
3 egg whites at room temperature
1/4 tsp salt
1/2 tsp vanilla
1/2 cup sugar

Filling
1/2 cup dark chocolate chips
1/2 cup cinnamon chips
1 cup chopped walnuts
2 tbs sugar

Topping
Egg wash: 1 beaten egg
Melted chocolate to drizzle on top

Meringue Filled Coffee Cake

1. Start the dough by mixing 1 1/2 cups flour, the sugar, salt and yeast.

2. In a saucepan heat the milk, water and butter until the butter is melted. With an electric mixer on low speed gradually pour in the warm milk and mix for 2 minutes. Add the eggs, 1 cup of flour and beat for 2 more minutes.

Meringue Filled Coffee Cake

3. Using a wooden spoon stir in the remaining flour to make a dough that sticks together. Turn onto a floured surface and knead for 8-10 minutes until the dough is soft, smooth and elastic. I had to add about another cup of flour as I was kneading.

Meringue Filled Coffee Cake

4. Place the dough in a lightly greased bowl (with vegetable oil) and cover with cling film and a tea towel for 45-60 minutes. The dough should double in size.

5. While the dough is rising make the filling by mixing the different chips and sugar in a small bowl and chopping the walnuts.

6. Make the meringue in a medium sized bowl by whipping the egg whites on medium high speed. Add in the salt and vanilla. Slowly add in the sugar until stiff peaks form.

Meringue Filled Coffee Cake

7. Remove half of the dough and roll it out on a lightly floured surface into a rectangle.

Meringue Filled Coffee Cake

8. Spread half of the meringue half an inch away from the sides and scatter half of the chocolate chip mixture on top and then half of the chopped walnuts.

Meringue Filled Coffee Cake

9. Roll the dough like a jellyroll from the longer side and transfer to a non stick cookie sheet. (the directions say to make this a ring and seal it together but I made one big ring using both half's). Repeat with the remaining dough and seal the ends with the other half and make a ring.

10. Using a sharp knife make cuts along the outside edge at one inch intervals. Cover with cling film and let rise for 45-60 minutes. Brush with the egg wash.

Meringue Filled Coffee Cake

11. Preheat oven to 350 F/180 C and bake for 25-30 minutes until risen and golden brown. It should sound hollow when tapped. Drizzle the top with some melted chocolate.

A few nights ago I was lucky enough to be at the book launch for Peyton & Byrne British Baking. I haven't been to a book party before so I was pretty excited! It combined a lot of awesome things: baking books, champagne and eating! No great food event is complete until I've eaten so much that I feel just a little bit sick by the time I leave.

Peyton & Byrne Book Launch

It was in the beautiful Daunt bookstore in Marylebone. I'm so glad that I went. I usually go to baking/cake events on my own and while it's hard since I'm a little shy I do end up meeting and chatting to people that I wouldn't if I'd gone with a group of friends. I met some really great people this time. It's nice to spend time with people that aren't accountants!

I met Nick and Alexis from Food Network UK. Fascinating talking to them about what shows are popular in the UK vs the US. I went out for a drink afterward with a few other women that I met while there. They were so nice and all had such fascinating jobs.

I can honestly say that Oliver was so nice and generous. The book is really great. Lots of really stunning pictures, the recipes have good instructions and are all British. It's definitely the kind of book that you'll keep forever. Really looking forward to baking from here as I'm trying to expand my baking knowledge.

He served up some canape sized portions of desserts, some of which are in the book!
