I've shown you two pretty labor intensive Easter cupcake ideas, Bunny Ear Cupcakes and Bird Nest Cupcake toppers, but today I wanted to show a simpler version. Although I like the look of them, in the end, you don't really need picks and all the bells and whistles. Sometimes, simple is best.
I made about a dozen of these little cookies from my last little bit of dough the other day.
Then, I whipped up the simplest but most amazing lemon poppy seed cupcakes using Tidymom's "Doctored-Up Cake Mix Recipe" {which is now my new favorite thing} except that I used a lemon cake, added two tablespoons of poppy seeds, and substituted half of the liquid for lemon juice.
It made two dozen cupcakes and I only needed half of them for my project, so that left half for us. I wasn't sure how the lemon would go over with the kids, but between the five of us, we INHALED them =) They were REALLY REALLY good!
For the frosting, I used another super simple but delicious lemon frosting recipe from i am baker.
On Monday I will talk more about the quickest way I know to decorate with royal icing. It works on large and small cookies, and will hopefully free up enough time that ANYONE can do this.
