You know the one I’m talking about.  The dish that people talk about in hushed tones.
 Where they say ‘Oh yes, Lucy’s paella is amazing isn’t it? I can’t wait to be invited to her place for dinner again.”
TV shows talk a great deal about people having signature dishes. As I understand it that's the meal that's a standout, not the same as the dinners I cook up nearly every night of the week. 
In my case it’s spaghetti carbonara. My dad taught me how to make pasta from scratch a couple of years back and I was an instant convert. It’s messy, fun and tastes delicious.
I get the offspring right in there with me to make the dough, and Husband is in charge of the pasta making.
About once a month we invite friends over for pasta night. They’re roped into helping make the pasta and I whip up my signature sauce. Because I have a healthy respect for my coronary arteries, I use the fat free carnation milk instead of cream for the sauce.  I like to think of my subtle variation to the recipe as the reason it’s “my creation.” I suspect brighter minds have been there before me. I still claim ownership anyway!
I make my signature dish monthly, on the other hand, my brother Barry makes his at least once a week.  Well when it’s walnut salad and has 3 ingredients it’s probably a tad less time consuming.
In stark contrast, Husband makes his signature dish about once every three years. I’m not kidding. It’s so complicated it deserves its own postcode. It’s called “Amaretto and macadamia nut soufflé served in a chocolate cup on a raspberry coulis”
Making it involves balloons and too many ingredients to count. It is sublimely decadent however, and deserves to be talked of in tones of awe.
So school holidays are fast approaching and now I’m not racing everywhere with the offspring I thought we would spend some of our time cooking up a storm. Do you have a signature dish?
